- Spray drying is relatively cost effective, energy efficient and high throughput drying system, however, it is damaging to bacteria. This study investigated approaches and methods to improve the survival of lactic acid bacteria by modifying the drying conditions and/or adding protective substances to enhance bacterial survival and culture activity in spray dried culture powders.
